Back in the band days, Kaila and I had the opportunity to tour in Malaysia performing in our rock band. While we were there, I had the honor of trying an unusual but absolutely unforgettable Malaysian jelly dessert. That’s why I decided to share this Lompat Tikam Recipe provided by the Malaysian Tourism Board.

This is an easy to intermediate recipe to make. Now, I don’t want to deter you if you’re a beginner cook, but there are multiple steps to get to the end results.

The dish is a sweet rice jelly dish made from coconut milk, rice, and rice flour. I didn’t have the exact ingredients to make it, but I had substitutions that still made it equally delicious and easier to make.

So, without further ado, let’s get cooking!

Ingredients

Coconut Milk Mixture

  • 1/2 cup milk
  • 1/2 cup coconut water
  • 2 TBSP Rice Flour
  • 2 TBSP Sugar
  • 1 pinch of salt

Rice Pudding

  • 1/2 cup of water
  • 1/4 cup rice flour
  • 1 tsp green food coloring
  • 1 pinch of salt
  • optional: 1 tsp of unflavored gelatin

Pulut Merah (red sweet rice)

  • 1/2 cup sweet rice
  • 3 1/2 TBSP coconut water
  • 3 1/2 TBSP milk
  • 2 TBSP sugar
  • 1 tsp red food coloring
  • 1 pinch salt

3 TBSP Maple Syrup

Directions

Coconut Milk Mixture

Place milk, coconut water, rice flour, sugar, and a pinch of salt into a pot on medium heat. Cook down until the mixture thickens for around 4-5 minutes.

Rice Pudding

Put water, rice flour, food coloring, salt, and gelatin if you want a more jelly texture into a pot. Heat and medium-low heat for about 5 minutes.

Evenly place the jelly into 9 of the muffin tins. Refrigerate for an hour until the jelly sets.

Pulut merah

Add rice, water, coconut water, milk, sugar, red food coloring, and salt into a pot and cook with the lid covered for around 15-20 minutes until the rice is cooked all the way through.

Place the cooked rice into molds and pack tightly.

To assemble:

Pour maple syrup into a dish. Then assemble your green rice pudding jelly on top, followed by the coconut mixture. Then top gently with the Pulut merah molds. Serve immediately!
