Growing up, I remember one of my favorite Chinese dishes my mom used to make was Soy Sauce Chicken. I used to LOVE this dish so much because it was one of my dad’s favorite dishes, and I always aspired to be just like him.
This recipe is packed with Chinese flavors and is easy to make and prepare. In order to get that rich and savory soy sauce flavor, the trick is to cook the wings on low heat in the sauce so the skin soaks up the marinade. You also want to make sure the sauce is slightly saltier than you would expect. That way, it penetrates into the chicken giving it the best flavor possible.
You can do this recipe also with drumsticks and thighs. Don’t forget to get cuts that still have the skin since that’s what soaks the flavor and gives it the perfect texture you want.
So, without further ado, let’s get cooking!
Ingredients
- 1 TBSP vegetable oil
- 3 scallions chopped
- 1 TBSP diced ginger
- 1 lb of chicken wings
- Water (enough to cover wings roughly 1 cup)
- 1 1/2 TBSP dark soy sauce
- 2 TBSP light soy sauce
- 2 TBSP sugar
- 1 TBSP minced garlic
Directions
Heat up a wok hot enough until the pan itself starts to steam.
Add vegetable oil and give it a quick swirl.
Add your chopped scallions and diced ginger and stir fry for about 1 minute. You should be able to get a nice fragrance.
Place your chicken wings in the fragrant oil and heat for about 3-4 minutes until the skin turns golden brown.
Put enough water to cover the wings (roughly 1 cup of water). Then add dark soy sauce, light soy sauce, sugar, and minced garlic. Stir and cover and cook for about 20 minutes stirring occasionally.
Remove the cover and take the chicken wings out and set aside in a separate dish.
Reduce you sauce until it becomes viscous and thick and bubbly.
Place your chicken wings back in the pan and toss and cover in the sauce. Serve hot or even eat straight out of the refrigerator.
