In this particular recipe, we used delicious pulled pork carnitas style. But if you’re not feeling like pulled pork, you can always substitute it with carne asada, beef, or ground beef.

Also, we chose to add a sunny-side up egg. Again make your eggs just the way you like it, though you do get that ooey-gooey egg yolk drip with a perfect sunny-side up egg on top!

So, without further ado, let’s get cooking!

Ingredients

  • 1 TBSP Olive Oil
  • 1 cup pulled pork
  • 1 egg
  • 1 medium yellow potato  diced
  • 3 baby peppers sliced
  • 1 TBSP maple syrup
  • ¼ red onion diced
  • 1 TBSP demi glace or gravy
  • ¼ avocado sliced
  • Optional: Garnish with lime slice

     

Add olive oil to a pan and heat it up a bit. Then, add your diced potatoes and cook for about 4-5 minutes until the edges are slightly browned and the potato is translucent.

Put in your diced onions and cook down for about 1-2 minutes.

Then, add your sliced baby peppers and cook for another 2-3 minutes. Don’t forget to mix constantly so you don’t burn your vegetables. They should be cooked down and ever so slightly browned at the edges.

Plate your vegetables in a bowl.

Add your pulled pork on top of the vegetables.

Top off with maple syrup.

Start cooking your egg the way you like them. We did sunny side up for that ooey gooey goodness.

Add demi glace or gravy over the top of your pulled pork.

Top off your bowl with your egg.

Add your sliced avocado on the side or top of your bowl.

Optional: garnish with lime
