Estonia has so many delicious cuisines to offer. One of the most standout dishes that caught my eye is the Estonian Cookie Cake (Küpsisetort). This decadent dessert is not only memorable to your tastebuds but also extremely easy to make (no baking required!).

One of the trickiest parts about baking this cake is finding the recipe in English. Fortunately, we were able to find a delicious recipe courtesy of Visit Estonia that the world should know about.

If you’ve ever been to Estonia or celebrated an Estonian’s birthday, you’ll likely find this layered delicious curd cheesecake-like cream being served. We’ve put together an easy and fun recipe that requires no baking that you will LOVE.

Ingredients

  • 1 or 2 packages of square cookies (at least 20 cookies per pack)
  • 3 cups of milk or coffee
  • 4 TBSP sour cream
  • 1/4 cup chocolate chips
  • 4 TBSP heavy whipping cream
  • 3 TBSP butter
  • Pearled sugar and sprinkles for decoration

Directions

Start by dipping your cookies into the milk or coffee 3 cookies at a time. BE CAREFUL! Your cookies will get mushy so don’t put them in all at once. Only a quick 1-second dunk should suffice.

Arrange your cookies on a baking dish in a square formation. I put 2 rows of 3 cookies.

Spread 1 TBSP of sour cream on top of the cooks so that it covers the tops.

Then, dunk another layer of cookies and add them on top of the sour cream layer.

Repeat these steps until you have a 3 layer cookie stack. Top of the cake with one last layer of sour cream.

To make the chocolate sauce, you’ll need to heat up 1/4 cup of chocolate chips in a pan on medium/low heat. Add 4 TBSP of heavy cream and 3 TBPS of butter to the sauce and melt until smooth.

Pour your chocolate sauce over your cake so it covers the entire cake.

Top off with sprinkles and pearled sugar and refrigerate for 4 hours or more.

Slice into small squares and serve!
