If you’re looking to spice things up a bit for dinner but want an easy recipe that’s quick and simple, you’ve come to the right place. This Thai Turkey Larb recipe inspired by the Four Seasons Resort Koh Samui is one of the most delicious healthy meals you can make.

This time around, we used ground turkey since there was some in the fridge. However, you can use fresh tuna like how they do it at the Four Seasons Resort Koh Samui for an elevated flavor or if you don’t feel like cooking anything!

Ingredients

  • 1 pound ground turkey
  • 2 small shallots
  • 1 spring onion diced
  • 3-4 Thai chilies diced
  • 2 Thai onions diced
  • 1 sprig of parsley
  • 1 sprig of mint leaves
  • 1 ½ TBSP of Thai Fish Sauce
  • 2 TBSP Lime Juice
  • ½ teaspoon sugar
  • ½ teaspoon chili powder
  • 1 tablespoon of toasted rice

How to Make Toasted Rice

  1. In a small pan, add your rice and place on medium to low heat

  2. Cook until golden brown (roughly 15 minutes) moving the rice grains frequently (every 2 minutes)

  3. Place your toasted rice in a mortar and pestle and grind in a find powder

How to Make Turkey Larb Mix

1. Heat up a large pan and cook your turkey

2. Add a tablespoon of soy sauce and add pinch of salt and cook until browned. Let it cook for 5 minutes.

3. Place your cooked ground turkey in a large mixing bowl and add all of your vegetables and Thai chillies. Mix well.

4. Add your fish sauce, lime juice, and half of your toasted rice powder, and chili powder and mix well.

5. Place your salad on a dish and garnish with mint and parsley. Top it off with the remaining ground toasted rice and serve.
