I had the best time staying at The Caribe Hilton and really enjoyed delicious food from the multiple restaurants on the property.
This next recipe is for their Puerto Rican inspired frittata, a Longanisa and Sweet Plantain Frittata, so much yum!
It’s easy and fast to make:
To get start, chop the sausage, green peppers, plantains into bite sized pieces.
Grab 6 eggs and beat them in a separate bowl.
Heat up your pan to a medium heat and then saute the meat and veggies until the meat is cooked through and the vegetables are soft.
Pour in the eggs. Rock the pan gently so that the eggs spread evenly.
Cook for 5 minutes, or until the edges of the egg are set. Next add your cheese into the egg mixture. Let it cook for 1 minute.
Flip the frittata onto a plate and then place it back into the pan to cook for 3 more minutes.
Place it onto a plate and serve!
Longanisa and Sweet Plantain Frittata
- 1/2 green pepper
- 1/2 red onion
- 1/2 sweet plantain
- 1 longanisa sausage substitute with any sausage
- 1/2 cup cheddar cheese
- 3/4 cup breakfast potatos
- 1/4 cup cilantro
Heat oil in medium sized pan
Saute vegetables, sausage, and plantain
Beat eggs in a small bowl then pour in the mixture. Shake the pan to evenly distribute the egg across then entire pan
Cook for 5 minutes or until the edges are fairly set. Top with cheese and cook for another minute
The flip the frittata onto a plate and place it back into the pan. Cook for another 3 minutes
Place onto a plate and top with chopped cilantro
