I've never visited the Barbados before but it's definitely on my list of top destinations. I was excited to review the Taste Cookbook, which features a collection of recipes from from The Elegant Hotels Group, with properties in Barbados.

The Elegant Hotels Group is a collective of seven resorts with a total of 18 restaurants amongst them. One of the stand out elements of staying at one of these hotels is that guests can participate in the Elegant Hotels' Dine Around Program. This gives them access to dine at any of the restaurants within the group. The cookbook also gives you an intimate introduction to the chefs working at each of the restaurants from chefs to bartenders and beyond.

The cookbook is gorgeously shot, featuring both upscale recipes from fine dining restaurants in Barbados to traditional Bajan recipes. I love the mix of both! It's definitely a great armchair travel way to get a taste of the cuisine of Barbados before getting a chance to visit there.

There is also a wide range of recipes from more elaborate show stopping recipes to simple to make a home recipes so you have plenty to choose from. 

Here are some of the recipes that I want to try: Bajan Macaroni Pie, Beef and Potato Roti, Rum Glazed Pork Belly, and Spaghetti Lobster.


Zucchini Fritti

I choose to make the zucchini fritti recipe and love that the recipe serves 2 people instead of 4 or 6! This item is a signature dish from the restaurant Daphnes. It's a great side dish to serve with a sandwich, burger, roasted chicken, and more! It's a healthy alternative for fries and super yummy.
