I especially loved adding Blue Evolution’s Toasted Sesame Popcorn to these cookies because they add a delicious savory and salty hint to the cookies which are a totally game changer.

Blue Evolution‘s seaweed popcorn features organic popcorn which is enriched with umami filled seaweed. Did you know that seaweed is a superfood? Not only is this popcorn packed with flavor, it is incredibly nourishing and satisfying. It comes in four flavors Salt and Vinegar, Turmeric Ginger, Toasted Sesame, and Spicy Citrus.

It comes in these flavors. For this recipe, we used the Toasted Sesame which tastes spicy, savory, with a hint of citrus. Featured flavors include toasted sesame, black pepper, lemon, garlic, and ginger. This snack is a great source of plant-based iodine, iron, and magnesium.

Ok let’s get started!  First preheat your oven to 325 degrees. Using an electric mixer or stand mixer add the brown sugar, butter, and white sugar. 

Mix on low until blended and then add the vanilla extract, egg, and egg yolk.

Sift together the flour, matcha, and sugar.

Add the flour mixture into the batter.

Gently fold in the white chocolate chips. 

Lightly chop the Blue Evolution Toasted Sesame popcorn before gently folding it into the cookie batter mix. Do not overmix!

Try to resist eating this batter as is….it’s quite addictive!

Grab a baking sheet and line with foil or parchment paper. Grab one heaping teaspoon of batter per cookie and add it to the baking sheet at least 2 inches apart from each other. 

Bake for 10 minutes or until the edges are nice and brown. 

Try to resist eating until cooled. They are quite delicious piping hot and still gooey.

Matcha Popcorn Green Tea Cookies

Ingredients

  • 2 cups Blue Evolution Toasted Sesame Popcorn
  • 1 cup white choclate chips
  • 2 cups AP Flour
  • 1 tbsp matcha powder make sure the powder is designed for baking
  • 1 cup packed brown sugar
  • 1/2 tsp salt
  • 3/4 cup melted, unsalted butter
  • 1/2 cup white sugar
  • 1/2 tbsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 325 degrees.

  2. Using an electric mixer on low, mix brown sugar, butter, and white sugar. After the mixture is blended, add vanilla extract, egg, and egg yolk and mix until creamy.

  3. Mix together flour, baking soda, salt, and matcha.

  4. Lightly chop popcorn into smaller pieces.

  5. Add flour mixture into the batter mix until just blended. Add in white chocolate and popcorn.

  6. Grab a baking sheet, top with foil or parchment paper. Add cookie dough to the sheet, about 1 large tbsp each, and leave at least 2 inches of room between each cookie.

  7. Bake 10 minutes.
