During the trip, our chef gave us a cooking demo and shared his recipe on making delicious and savory Kundapur Chicken Curry Recipe. It's so delicious to make at home and I'm so excited to share the deliciousness with you!

Kundapur Chicken Curry Recipe – Kundapur Koli Saaru

Ingredients

KUNDAPUR PASTE

  • 1 tbsp peppercorns
  • 1 tsp cumin seeds
  • 4-5 cinnamon sticks
  • 2 tbsp coriander seeds
  • 4-5 red chilis
  • 6 tbsp grated coconut
  • 2 cups water

CURRY

  • 4 tbsp coconut oil
  • 1 tsp cumin seeds
  • 10-15 curry leaves
  • 4 tbsp chopped onions
  • 2-3 sliced green chilis
  • 4 tbsp ginger garlic paste
  • 4 tbsp chopped tomatos
  • 1/2 tbsp tumeric powder
  • 2 lbs curry cut chicken
  • 6 tbsp kundapur paste
  • 5 tbsp coconut milk
  • salt to taste
  • 2 cups water
  • 1 tbsp tamarind pulp tamarind soaked in water
  • 1 small bunch coriander leaves for garnishing

Instructions

  1. Heat oil in a pan. Add cumin seeds, curry leaves, chopped onion, ginger garlic paste, green chili and saute unti light brown

  2. Add chopped tomatos and tumeric and saute

  3. Add chicken, kundapur paste, salt, water, and mix well.

  4. Cover and cook for 15-20 minutes or until the chicken is cooked.

  5. Add tamarind pulp and cook for 2 minutes, then add coconut milk. Check the taste and season as needed.

  6. Serve hot with steamed rice, kori roti, or indian bread (aaki)
