Homemade Banh Khot Recipe

So, now that you chose your aebleskiver pan, and we’ve been talking about banh khot, let’s throw in a recipe for you to make a home.

 For those of us that are new to banh khot, you can expect a flavorful and addicting dish. If you’re prone to snacking, you’ll definitely be munching on these batch after batch! 

Vietnamese Banh Khot Mini Pancakes

Ingredients:

BATTER:

  • 2 ⅓ cups rice flour

  • ¼ cup corn starch

  • 3 ¼ cup water

  • 1 cup cocounut milk

  • 1 tsp tumeric powder

  • ¾ tsp sea salt 

EVERYTHING ELSE:

  • Vegetable oil

  • 25 large shrimp (peeled + deveined)

  • 4-5 green onions

  • 3 garlic cloves (minced)

  • ½ tsp salt

  • ¼ tsp pepper

  • 1 cup dried prawns (soak in water for 5 mins; drain and rinse)

  • Vietnamese fish dipping sauce (nuoc man cham)

  • Greens: lettuce, cilantro, perilla, mints

  • Banh khot pan 

INSTRUCTIONS:

  1. In a bowl, combine shrimp, whites of green onions, garlic, salt, and pepper. Marinate for 30-45 minutes

  2. To make scallion oil: mix leftover green onion and 1 tsp vegetable oil in a microwave safe bowl. Microwave for 30 seconds

  3. Make the batter using a whisk; mix all ingredients in

  4. Take dried shrimp and put inside food processor until fine

  5. In a frying pan, heat 1 tbsp vegetable oil on high. Add minced shrimp until toasted. Remove from pan and put aside

  6. Heat banh khot pan on high on the stovetop, or turn on pan. Add oil to each hole and coat the inside of the walls

  7. Add 1 tbsp of battle to each hole

  8. Quickly add shrimp on top of the batter

  9. Place a lid (if you have one) on top of the pan. Let cook for 3-4 minutes

  10. Remove the lid and let cook for another minute 

  11. Brush the scallion oil you made over each banh khot 

  12. Add some toasted dry shrimp on top

  13. Remove the banh khot from the pan with a spoon, chopsticks, or a pick. If batter is sticky or breaks, it might not be done yet. Cook until edges are crispy and come off the pan smoothly

  14. Take out cooked banh khot and serve immediately

Serve your banh khot with fish sauce, sweet and sour sauce, or some sriracha!
