Lompat Tikam (Malaysian Jelly Dessert) Recipe

This dish is a sweet rice jelly dish made from coconut milk, rice, and rice flour.

Ingredients

Coconut Milk Mixture

  • 1/2 cup milk
  • 1/2 cup coconut water
  • 2 TBSP sugar
  • 2 TBPS rice flour
  • 1 pinch salt

Rice Pudding

  • 1/2 cup water
  • 1/4 cup rice flour
  • 1 tsp green food coloring
  • 1 pinch salt
  • 1 tsp unflavored gelatin optional

Pulut Merah (red sweet rice)

  • 1/2 cup sweet rice
  • 3 1/2 TBSP coconut water
  • 3 1/2 TBSP milk
  • 2 TBSP sugar
  • 1 tsp red food coloring
  • 1 pinch salt

Syrup

  • 3 TBSP maple syrup

Instructions

Coconult Milk Mixture

  1. Place milk, coconut water, rice flour, sugar, and a pinch of salt into a pot on medium heat. Cook down until the mixture thickens for around 4-5 minutes.

Rice Pudding

  1. Put water, rice flour, food colowiing, salt, and gelatin if you want a more jelly texture into a pot. Heat and medium low heat for about 5 minutes.

  2. Evenly place the jelly into 9 of the muffin tins. Refrigerate for an hour until the jelly sets.

Pulut merah

  1. Add rice, water, coconut water, milk, sugar, red food coloring, and salt into a pot and cook with the lid covered for around 15-20 minutes until the rice is cooked all the way through.

  2. Place the cooked rice into molds and pack tightly.

Assembly

  1. Pour maple syrup into a dish. Then assemble your green rice pudding jelly on top, followed by the coconut mixture. Then top gently with the Pulut merah molds. Serve immediately!
