Longanisa and Sweet Plantain Frittata

Servings 4 people


  • 1/2 green pepper
  • 1/2 red onion
  • 1/2 sweet plantain
  • 1 longanisa sausage substitute with any sausage
  • 1/2 cup cheddar cheese
  • 3/4 cup breakfast potatos
  • 1/4 cup cilantro


  1. Heat oil in medium sized pan

  2. Saute vegetables, sausage, and plantain

  3. Beat eggs in a small bowl then pour in the mixture. Shake the pan to evenly distribute the egg across then entire pan

  4. Cook for 5 minutes or until the edges are fairly set. Top with cheese and cook for another minute

  5. The flip the frittata onto a plate and place it back into the pan. Cook for another 3 minutes

  6. Place onto a plate and top with chopped cilantro
