A delicious and healthy way to spice up your ground turkey Thai style!
In a small pan, add your rice and place on medium to low heat.
Cook until golden brown (roughly 15 minutes) moving the rice grains frequently (every 2 minutes).
Place your toasted rice in a mortar and pestle and grind in a fine powder.
Heat up a large pan and cook your turkey.
Add a tablespoon of soy sauce and add a pinch of salt and cook until browned. Let it cook for 5 minutes.
Place your cooked ground turkey in a large mixing bowl and add all of your vegetables and Thai chillies. Mix well.
Add your fish sauce, lime juice, and half of your toasted rice powder, and chilli powder and mix well.
Place your salad on a dish and garnish with mint and parsley. Top it off with the remaining ground toasted rice and serve.
