I was interested in delving into Three Veg and Meat because I am always trying to incorporate more veggies into my life. I live with three awesome grocery stores in walking distance, and I've taken to purchasing groceries for my meals daily. This works better for me than buying all my groceries for the week at once, which inevitably results in fresh produce going to waste.
With Chinese food, it's pretty easy to eat mostly vegetables and a smaller portion of meat, so many of our vegetable dishes are just so delicious, I would love to apply this to American food also (although this cookbook recipe does include many fusion recipes from different cuisines)
The author of the book is Olivia Andrews and many of her recipes are healthier versions of comfort food favorites. Some of these include:
- Deep-dish pizza
- Taco Salad
- Tuna mac 'n' cheese
The recipe that really stood out to me was the 'Steak' Sandwich and it totally surprised me! I've never had a portobello sandwich before so I was definitely skeptical of it tasting anything like steak.
The recipe features ample amounts of grilled onions, which really added to the flavor
I tweaked the recipe a bit to my personal tastes. I love mayo but I usually prefer ketchup only on burgers, so I omitted the ketchup from the recipe and added fresh tomato instead.
Wow! I never knew that a portobello mushroom could taste so meaty! Also, the portobello really cooks quick, just 5 minutes under the broiler. This is definitely a delicious and filling sandwich and I didn't miss the meat at all.
There's just one note which is that this sandwich needs to be eaten immediately and fast! The portobello is extremely juicy and it definitely soaks into the bread. Great lunch option!
